Something Mediterranean Inspired.

It's been ages since I blogged a recipe. Tonight's dinner though is worth blogging even if I didn't get a photo.

I made it up as I went along, hence no actual measurements but it's easily adapted to your budget and taste. More chickpeas less meat etc... Please let me know if you try it.

Basic Ingredients:


Chorizo - finely sliced and halved
Chicken breast - bite size pieces
Coriander - pureed or finely chopped -  to taste
Garlic -  crushed to taste
Oregano - to taste
Chickpeas - drained


Cook all of this together in order in a hot pan.  Then add the next to suit your family. 

Extras
Kalamata olives - half in to heat through and half for garnish.
Green olives - see above.
Cherry tomatoes - see above
Stuffed peppadews

Heat through slightly.

Garnish:
Crumbled feta
Sliced spring onions
Reserved olives, tomatoes

Serve with hot crusty Turkish bread or Ciabatta to add even more confusion to the origins of the meal.
